Steamed cod with tomato and plum Sauce

Cooking time approx 10 to 30 mins
A healthy, tasty main course - steamed cod is flavoured with anise and served with greens,
mushrooms and accompanied by a tangy sauce.
400g can red plums in syrup
2x400g cans tomatoes
pinch of Chinese five-spice powder
4x225g/8oz thick cod fillets, remove skin and bones
255g/9oz pack mixed Chinese greens
110g/4oz shiitake mushrooms
1 piece of star anise
salt and freshly ground black pepper
1. Pour the canned tomatoes and plums into a pan, add the five-spice powder and simmer gently for about 10 minutes to reduce. Push through a sieve and set aside.
2. Place the cod in the bottom of a steamer and season lightly.
3. Place the shiitake mushrooms, Chinese greens and star anise in the top of the steamer, put the lid on and steam gently for 8-10 minutes.
4. To serve place 2 tbsp of the sauce on each plate and top with the steamed vegetables. Carefully remove the cod and place on top.
